Introducing Veronica Tobon, our dynamic chef whose culinary journey began in the heart of her Colombian home kitchen. Inspired by her mother’s culinary passion, Veronica developed a deep appreciation for flavours and techniques, especially those rooted in Colombian cuisine’s use of coals and fire.
In 2016, a pivotal moment at a Moda-hosted wedding sparked Veronica’s newfound passion for cooking. Since then, her style has evolved to embrace her love for cooking over coals and fire, alongside mastering the delicate art of ceviche and seafood, influenced by Moda’s Chef Javier.
Veronica’s dishes stand out for their unique flavour combinations and her commitment to crafting unforgettable dining experiences. Her signature Prawn Ceviche epitomizes her culinary prowess, blending vibrant ingredients like lime juice, jalapenos, and coriander.
Driven by quality produce, Veronica elevates simple ingredients into standout dishes, like her roasted baby cauliflowers with Saffron Sauce, resonating with our guests and highlighting her innovative approach.
